Day Eight and Nine

Warning: Every meal below looks completely unappetizing. I need to step up my photography skills. 

Yesterday, Day Eight

Breakfast: oatmeal with agave nectar
I challenge anyone to make oatmeal look delicious. Actual oatmeal. 
Snack not shown. It was the rest of my California roll from yesterday.

Lunch: spicy tuna roll

Dinner: vegetarian tostada
Our Friday night spot has this chicken tostada that I love. However, since I'm off the mammal-eating train, I haven't been able to order it-but it was exactly what I wanted last night. So, I asked if they would put some calabacitas on the tostada instead of the chicken..and they did! Huzzah! It was so delicious and I totally forgot to take a picture until I was well through the meal.  That means the picture does not do the tastiness of this meal justice at all.


Then we went out to celebrate a friend's work accomplishment. I drank so much beer...and ate a ton of french fries.  It does seem a little silly that I feel it necessary to divulge information like this, but it appears that I eat so healthy...when in fact, I stuffed my face last night with deep fried food (Mexican and British) and drank enough to constitute another meal.  I mean I guess I do eat well...and then top it off with a lot of not well. 

Today, Day Nine

 I tried to tone it down a bit, after yesterdays crazy eat-fest.
morning snack: homemade walnut butter
I'm a nut-butter junkie.  I love them so much. This was made with sprouted black pepper walnuts from Whole Foods.  I don't know what 'sprouted walnuts' are - as in, how they can be sprouted and/or how they differ from regular walnuts - but I think 'sprouted' generally translates as 'good for you' and the added salty-pepper taste was what won me over.  It didn't matter that they were $19.99 a pound.

Lunch: I completely forgot to take a picture. It was a spicy tofu cabbage salad.  It was similar to this.

Dinner: black bean and corn salad with kale
A twist on the dish from the other night. The twist being kale (instead of spinach), lemon juice, and lots of salt.
